Does Infiniti still make a manual? 

No, there are no new models of Infiniti that you can purchase with a manual transmission.  While some recent models had the option of a manual transmission, Infiniti discontinued its stick shift offerings in 2020.

Infiniti G35
was in production in the early 2000s and was well-loved by Car and Driver. Both the sedan and the coupe had the option of a six-speed manual transmission.
Under the hood, you’ll find a 6-cylinder, 3.5-liter engine that will provide anywhere from 264 to 306 horsepower, depending on the model year and the trim. Infiniti is Nissan’s luxury line, so you can definitely expect to have some high-end features and top-quality creature comforts as you work the gearbox.
There were a good amount of fun extra packages offered on the G35, including a Premium Package with sunroof and upgraded sound system, a Performance Tire and Wheel Package, and an Aero package that added a rear spoiler and four underbody diffusers to reduce drag. 

G37

Infiniti G37
was the 2009 upgrade that followed the G35, so as you can imagine, it’s got a little bit more going for it. It’s more refined than its predecessor, and was available as a sedan, a coupe, or a convertible—so you’ve got some options to choose from as far as body style. 
Prices for used G37s will range widely depending on the year, body type, and options. Kelley Blue Book estimates a 2010 G37 sedan will go for about $10,000, while a 2013 coupe will run about $25,000. Like the G35, there were several packages offered, so do some research and know what kind of features matter to you. 
The engine is an upgraded 3.7 liter with up to 330 horsepower, and it will get you from 0-60 in 5.2 seconds. This is a luxury vehicle, and it will feel like it. Enjoy!

So this is a little weird, but there are conflicting results as to whether the
Infiniti Q60
was ever offered as a manual transmission. Some sources say yes, and some say no. Infiniti does offer several of its automatic transmissions with something called manual shift mode, which lets a driver select specific gears on demand but isn’t a manual transmission. 
If you find a used Q60 for sale that’s listed as a manual transmission, do your due diligence to determine what the exact specs are.
